Vineyard & Grapes: 100% from GWS Saperavi Vinyards
Method of Harvest: Hand-picking in small 20 kg boxes to ensure the highest quality of the grapes.
Yield: Average 5-6 Tons per hectare.
Vinification: Harvest hand-picked in 20 kg boxes from plots of our Vardisubani vineyards, this 100% Saperavi is fermented and macerated one month with skin contact, and then Malo-lactic fermentation is done in stainless-steel tanks, aged for 8-12 months in French oak barrels. The resulting wine is high in alcohol with powerful tannins, and features a dark, rich cherry color. Mulberry and sweet cherry aromas are enriched with aged oak bouquet and spicy tones. Rich but velvety tannin texture with balanced acidity.
Color: Mature ruby with brick hue.
Bouquet: Clear expression of ripe red fruit. The oak aromas pleasantly blend with the fruit
Taste: Full-bodied wine with strong tannin structure combined with balanced acidity. The tannic structure adds length and ageing potential to the wine.
The Terroir
Vardisubani is in an ancient riverbed, at an altitude of 600 meters, in an eastward-facing parcel with a soil of stones and pebbles over a limestone subsoil. Which naturally brings minerality to our wines and premium blends.
