Juicy Khinkali (Georgian Dumplings) 

With Tamada Khinkali Seasoning

There is nothing more warming than having khinkali on a cold winter day. The first bite releases a burst of rich, deep broth, and that combination of hot filling and tender dough makes them feel comforting from the inside out. Khinkali are satisfying in a way that goes beyond flavor alone: they are hearty, filling, and best enjoyed slowly, which makes the meal feel like a mother’s hug. 

Khinkali are more than food; they are a small ceremony of winter. The steam rising from the plate, the pepper clinging to the folds, the rich savor of the filling all come together like a story told slowly at the table. They invite you to pause, to savor, to let the cold outside fade while warmth gathers around the meal.

Ingredients

Dough

  • 4 cups all-purpose flour (1kg) 
  • 1 tsp salt
  • 1½ cups warm water 300ml
  • 1 egg 

Filling

  • 500g ground beef
  • 500g ground lamb
  • 1 large onion (finely grated)
  • 3 garlic cloves (minced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Tamada Khinkali Seasoning
  • 1 cup cold water or broth or until spoon doesn’t stand in the mince mixture 

Instructions

Step 1 — Make Dough

  1. Mix flour and salt
  2. Add egg to cold water and whisk 
  3. Add flour to the mix slowly 
  4. Knead for 10 minutes
  5. Rest for 30 minutes

Step 2 — Prepare Filling

  1. Combine meat, onion and garlic
  2. Add salt, pepper and Tamada Khinkali seasoning
  3. Slowly add cold water until the spoon cannot stand in the mixture 
  4. Mix well until combined 

Step 3 — Shape Khinkali

  1. Roll dough thin like pasta I often use pasta roller until you get to thickness  4 
  2. Cut circles (10-12cm) I use cutters
  3. Add filling (use a small bowl for convenience 
  4. Pleat edges
  5. Twist top set aside and repeat until you make about 15

Step 4 — Cook

  1. Bring salted water to boil 
  2. Do not boil more than 15 at a time 
  3. Add khinkali carefully
  4. Cook 12-15 minutes
  5. While  cooking make the next batch 
  6. Remove with slotted spoon 
  7. You  can add water and bring to boil for the next batch 

Cooking Tips

  • Use cold water for juicy filling
  • Don't overfill dumplings
  • Cook in large pot over 50L
  • Sprinkle black pepper before serving
  • Use Tamada Khinkali seasoning for authentic flavour
