  2. Parboil the potatoes: Cook the potatoes for 8 to 10 minutes, then drain well and allow them to steam dry.
  3. Make the flavour coating: Mix the olive oil, Adjika sauce and crushed garlic in a large bowl.
  4. Toss thoroughly: Add the potatoes and coat them evenly so every piece is covered in the spice mixture.
  5. Roast until golden: Spread the potatoes in a single layer and roast for 35 to 45 minutes, turning halfway through, until crisp and deeply golden.
