What is Blue Fenugreek?

Blue Fenugreek, known in Georgia as Utskho Suneli, is a traditional spice loved for its nutty, earthy, and gently sweet flavour. It adds warmth and complexity without overpowering a dish, making it especially good for vegan recipes, vegetable stews, legumes, sauces, and grain bowls.

Vegan Blue Fenugreek Potato & Mushroom Stew

This hearty Georgian-inspired stew is rich, comforting, and packed with aromatic flavour. Blue Fenugreek gives it a uniquely warm, savoury finish that makes simple vegetables taste special.

Ingredients

  • 3 potatoes, cubed
  • 250g mushrooms, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 carrot, sliced
  • 1 tsp Blue Fenugreek (Utskho Suneli)
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 cups vegetable stock
  • Salt and pepper to taste
  • Fresh coriander to serve

Method

  1. Heat olive oil in a large pan and sauté onion until soft and lightly golden. 
  2. Add garlic and carrot, then cook for 2 minutes.
  3. Add mushrooms and potatoes and stir for 5 minutes. (Tip. Try wild mushrooms . Mix porcini + oyster mushrooms for the most balanced flavour) 
  4. Mix in Blue Fenugreek, coriander, and smoked paprika. ( for best flavour add in step one! 1️⃣) 
  5. Add tomato paste and vegetable stock, then stir well. 
  6. Cover and simmer for 20 minutes, or until potatoes are tender.
  7. Season with salt and pepper, then finish with fresh coriander when serving.
  8. Serve warm with crusty bread, rice, or Georgian-style beans.
Tamada Tip: Add Blue Fenugreek earlier in cooking to let its nutty aroma infuse the whole dish.
