Vineyards: In this bottle two of the great Georgian wine regions are represented: Kakheti with its exquisite stony clay soils of Mukuzani and Kartli with its superb sandy alluvial soils of the Mukhrani vineyards. Sitting at 550-620 and 420 AMSL respectively, both Saperavi and Shavkapito are sourced from areas where they are proven performers.
Mesoclimate: Mesoclimate of Mukuzani delivers grapes of typical of warm climates with characteristic full-bodied wines with fine tannin. On the other hand, there is Mukhrani, which has a much longer maturation period allowing the fruit to exceptionally develop and retain an abundance of primary aromas.
Harvest: Harvest day is decided when both varieties are intended style and flavor profile. Only hand harvested to ensure fruit integrity.
History behind the style: Mukado Wines endeavored to represent these two great regions of Georgia in one style, as both Mukuzani and Mukhrani have been amongst the best regions for us to work with. Saperavi brings the strength into the blend, while Shavkapito balances its powerful expression by making it a wine of unequivocal elegance. This is one of Mukado’s symbols of our commitment to innovation.
VinificatIon: The ratio in which Saperavi and Shavkapito are harvested is determined by the resulting flavor profiles of the vintage. Initially, both varieties are treated in their own unique way and prepared for fermentation. Depending on the season stems are with completely or partially included or completely excluded. Saperavi and Shavkapito undergo tank fermentations using the wild yeast to emphasize terroir and vintage character. In very rare cases we may help start fermentation. Fermentation temperature is controlled at 20 – 22oC. Unlike the traditional approach dictates, we only macerate this wine maximum 14 days. We conduct induced and strictly controlled MLF onc e wine has completed alcoholic fermentation. Zero influence of oak is used, rather on the contrary, as we try to deliver a wine of the terroir with the expression of primary aromas of these age old varieties.
A rare, blend from the Origins of Wine: Saperavi – the Crown and Shavkapito – the Harmony of Georgian Reds have finally come across each other. This a marriage of the
two characteristically different grapes creating a wine of deep crimson color and aromas of mature mulberry and prunes. The body is rich and deep. Outstanding alongside Georgian spicy dishes, elegant with spicy stews and casseroles as well as grills.
